2tbspcooking oil
2tbspchili saucesouthern
2tbspOyster sauce
2-3green and red chili pepper
3kaffir lime leaves
1/2cupbasil leaves
300grChickenyou can use any meat

Instructions
Empty your cooking oil into a large non-stick pan, over a medium heat. Add the following ingredients: green and red chili pepper, chili sauce, Oyster sauce. Cook for a while.
Increase the heat and add the meat.
Add your chopped eggplant to the pan, along with the milk or water. Cook on a high heat until the eggplants are to your preference. You can add more water, to keep the eggplant from drying.
Toss in the lime leaves and coat them in the sauce. Once you are happy with the taste of your dish, turn off the heat before adding your fresh Thai basil.
Accompany your dish with Thai Jasmine Rice.
