Ingredients
8-12medium-sized shrimpsshelled and deveined
3tbspGreen Curry Paste
50grcoconut
100grpea eggplant
4kaffir lime leaves
3tbspchicken stockor water
50grsweet basil leaves
2red chili pepperssliced diagonally
3/4cupcup coconut milkkeep 2 tablespoons for topping before serving

1tbspfish sauce
1tbspsoy sauce

Instructions
Heat the oil in a wok over medium heat. Add the curry paste and stir-fry until fragrant.
Add the shrimp and stir until they are almost cooked. Then add the eggplant, eggplant peas and kaffir lime leaves. Fry, stirring, for 1 minute.
Season with soy sauce, fish sauce and sugar. Then add the chicken broth. Increase heat to high. Add sweet basil leaves and coconut milk. Stir-fry quickly until all ingredients are well blended. Remove from heat.
Transfer to a serving platter. Pour over the coconut milk (2 tablespoons) and serve immediately with the hot steamed rice.
