Do your children born in Thailand with one Thai parent and dual nationality have had to choose one citizenship when they reached 18 or 20 ?
Is it different for boys (army) and girls ?
How Thai administration would ever know if somebody has a dual nationality ?

The do not have to choose. They can do it if they want to at the age of 20. Before their 20th birthday it is the parents choice not theirs.
No difference between boys and girls.
They would not know a person had dual nationalities unless they told them or they used a non Thai passport to enter the country.
