How many days/months should the travel insurance be to enter thailand? is it possible to purchase a 30 days insurance for the sake of the COE and then get a cheaper insurance within the country?

No! I’m having big problem now getting any kind of insurance (note I’m on an STV)

Yes! You can buy the overpriced AXA/Luma insurance for 1 month and a cheaper insurance for the rest of your stay. But you will need to submit both certificates on the COE.
