If I plan on extending my Visa exempt entry when I’m in Thailand do I still need proof of leaving before 30 days when I arrive at the airport?

Depends on the airline policy. Many require you to have a ticket out of Thailand before you exempt status expires. Usually doesn’t have to be a flight back home just a ticket out of Thailand. A bus ticket will do. Hat Yai to Penang is around $10.
