if i write the lenght of stay 3 days on arrival card, but i have extends to 5 days, it’s ok or not?

Departure card only shows your intention to leave The Kingdom on the concrete date, but it won’t be a violation of law if you stay in Thailand for longer than this date if your current visa allows you to do it.
Your arrival card is not a visa, this means that if your visa allows you to stay in Thailand for the certain lendth of time, you can do it independantly of the date you have stated on the departure card.
To cut the long story short, if your visa is valid there will be no overstay even if the date on your departure card is wrong.
