Khao man gai (ข้าวมันไก่) is the Thai variation of Hainanese chicken rice, a dish that’s extremely popular throughout Southeast Asia. Hainanese chicken rice is a dish of poached chicken and seasoned rice, served with chilli sauce and usually with cucumber garnishes. It was created by immigrants from Hainan in southern China and adapted from the Hainanese dish Wenchang chicken.
Ingredients
- ~450 grams chicken
- 5 cups jasmine rice (or long grain rice)
- 5 cloves of garlic, peeled and crushed
- 3 pieces of ginger, peeled and crushed
- 1 tablespoon of salt
- coriander leaves (for garnishing)
Ingredients for Thai Chicken Rice dipping sauce
- 3 tbsp salted soyabean sauce
- 3 tbsp soy sauce
- 1 tbsp sweet black soy sauce
- 2 tbsp sugar
- 3 tbsp coarsely chopped fresh ginger
- 2 tbsp coarsely chopped garlic
- 6-8 chili peppers
- 2 tbsp white vinegar
- 5 tbsp chicken stock

I have tried this dish all over Asia and I just find it boring. I’m going to make this recipe because it looks easy and authentic. Maybe homemade will change my mind!
