Mamuang nampla wan is a classic Thai dish which is a combination of unripe mangoes and a sticky dipping sauce. In Thai, mamuang means ‘mango’, and nampla wan means ‘sweetened fish sauce’.
Mamuang Nam Pla Wan

Equipment
- sauce pan
Ingredients
- 1 cup water
- 16 oz Palm sugar
- 1/2 cup fermented fish sauce (padeak)
- 2 tbsp shrimp paste
- 1 tbsp Msg
- 1 tbsp chili powder
- 1/4 cup toasted rice powder
- 1/3 cup shallot sliced
- 1/2 cup small dried shrimps
- 1/4 cup dried shrimps medium size
- 12 chilies chopped
Instructions
- Pour water into the sauce pan and add palm sugar. Medium heat.
- Cook until sugar dissolved. Simmer 10 min.
- Reduce heat to low and add fermented fish sauce.
- Add msg and shrimp paste. Simmer for 5 min.
- Turn off heat and add chilli powder.
- Add the rest of ingridients one by one.
- Stir well.

Serve with sour fruits, such as mangoes, gauva and green apples.
