Ingredients
- 8-12 medium-sized shrimps shelled and deveined
- 3 tbsp Green Curry Paste
- 50 gr coconut
- 100 gr pea eggplant
- 4 kaffir lime leaves
- 3 tbsp chicken stock or water
- 50 gr sweet basil leaves
- 2 red chili peppers sliced diagonally
- 3/4 cup cup coconut milk keep 2 tablespoons for topping before serving
- 1 1/2 tbsp sugar
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- cooking oil
Instructions
- Heat the oil in a wok over medium heat. Add the curry paste and stir-fry until fragrant.
- Add the shrimp and stir until they are almost cooked. Then add the eggplant, eggplant peas and kaffir lime leaves. Fry, stirring, for 1 minute.
- Season with soy sauce, fish sauce and sugar. Then add the chicken broth. Increase heat to high. Add sweet basil leaves and coconut milk. Stir-fry quickly until all ingredients are well blended. Remove from heat.
- Transfer to a serving platter. Pour over the coconut milk (2 tablespoons) and serve immediately with the hot steamed rice.
